This August prepare your palate to try one of the most traditional delights in Mexico in the Chile en Nogada Festival, held in the state of Puebla.
Mexican cuisine, recognized in 2010 as Intangible Cultural Heritage of Humanity by UNESCO, is the testimony of the cultural history of our country. Mexico is famous because of its gastronomy which is full of flavors, aromas, colors, textures and influences that had turned it into a great attraction for tourists, both national and from abroad.
One of the most representative Mexican dishes is the Chile en Nogada. Its origin comes from 18th century beginnings, in the baroque time. They were made for the first time by a group of nuns in the Santa Monica augustine convent in the state of Puebla, the reason was a banquet honoring General Agustín de Iturbide, who was in town after signing documents recognizing the Independence of New Spain in August 1821. At the banquet, he had as dessert a "chile filled with fruit dipped in walnut sauce", where the pomegranate and parsley were used to represent the colors of the triangular flag.
Since then, this dish has become a source of pride for the inhabitants of the state of Puebla. Today, Chiles en Nogada are considered a delicacy, for many a very sophisticated and gourmet dish thanks to the large amount of ingredients that are required for its elaboration, such as apple, castilla nut, pomegranate and pineapple, they can use up to 50 ingredients.
